I became kind of obsessed with marshmallows this past summer. Most of the many campfires and cookouts I attended offered those little clouds of goodness. I nearly perfected getting a golden brown marshmallow, with a really gooey middle and crispy, but not black, outside. It takes a bit of patience, a watchful eye and a good stick to hold said marshmallow.
A gooey-inside-crispy-outside marshmallow is perfect for a s’more. But when you can’t get a fire going, these cookies will provide the sweet satiation you need.
This recipe is able to pack a lot of sugar and butter because of the extended time (10 minutes) the butter and sugar spend in the blender, which aerates the butter and allows it to keep a stiff cookie form when baked. If the rest of the ingredients are too well incorporated, the tiny bubbles will collapse and cause the cookies to spread in the oven, so be careful and follow the directions carefully; It’s totally worth it.
As the cookies require kitchen accessories not available around a mountain campfire, I’d encourage you to listen to some John Denver while eating them, to get you in the right state of mind.
