 That’s S’More Like It Cookies | OhMyPotluck.comI became kind of obsessed with marshmallows this past summer. Most of the many campfires and cookouts I attended offered those little clouds of goodness. I nearly perfected getting a golden brown marshmallow, with a really gooey middle and crispy, but not black, outside. It takes a bit of patience, a watchful eye and a good stick to hold said marshmallow.

A gooey-inside-crispy-outside marshmallow is perfect for a s’more. But when you can’t get a fire going, these cookies will provide the sweet satiation you need.

This recipe is able to pack a lot of sugar and butter because of the extended time (10 minutes) the butter and sugar spend in the blender, which aerates the butter and allows it to keep a stiff cookie form when baked. If the rest of the ingredients are too well incorporated, the tiny bubbles will collapse and cause the cookies to spread in the oven, so be careful and follow the directions carefully; It’s totally worth it.

As the cookies require kitchen accessories not available around a mountain campfire, I’d encourage you to listen to some John Denver while eating them, to get you in the right state of mind.

That’s S’More Like It Cookies

Makes about 2 dozen

(Inspired by Milk Bar)

  • 16 tablespoons unsalted butter, at room temperature
  • 1 1/4 cups granulated sugar
  • 2⁄3 cup packed light brown sugar
  • 1 egg (chilled)
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups high-protein flour or white bread flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons salt
  • 3 cups golden grahams cereal
  • 2⁄3 cup (4 1/2 ounces or 130 grams) semi-sweet chocolate chunks
  • 1 1/4 cups mini marshmallows
  1. At medium speed on a stand mixer, cream together the butter and sugars with a paddle attachment for 3 minutes. Scrape down the sides. Add the egg and vanilla. Beat the mixture for another 7 minutes, scraping down the sides as needed, to get it light and well aerated.
  2. Add the flour, baking powder, baking soda and salt. Beat at low speed until the dough just comes together (less than 1 minute). Stir in the golden grahams, chocolate chunks and marshmallows. Mix until just incorporated, but no more.
  3. Scoop the dough into 1-ounce (1/4 cup) balls onto a parchment-lined baking sheet. Lightly squish down the tops. Cover with saran wrap and refrigerate for an hour.
  4. Preheat the oven to 375˚F (190˚C).
  5. Spread the dough balls out on the parchment-lined baking sheet so they are at least 3 inches (8 centimeters) apart. Bake for 16 to 18 minutes so that the cookies are lightly browned around the edges. Remove from oven and cool completely on the baking sheet. Transfer to an airtight container to bring to the potluck.
