These scrumptious bites will be gobbled up quicker than you can bake them. Easy snacks like this are a great way to use zucchinis if you have a plentiful patch of the vegetable in the garden. They’re also a pretty healthy way to fulfill a crunch craving.
The spices pop as much as the deep golds and dark greens. I am convinced the vibrancy adds to the enjoyment of these treats. For me, anything colourful instantly gains a few taste points. There must be something psychological to this.
The great thing about baking these bites is that they retain so much of the colour and don’t need an excess of oil for cooking. I made them by tossing the sliced zucchini in olive oil, but I’ll often use spray oil to spray vegetables before cooking. Sprays seem to give a more uniform covering without over doing it. Still, both work great.
