Zucchini Chips off the Old Block

Zucchini Chips off the Old Block | OhMyPotluck.comThese scrumptious bites will be gobbled up quicker than you can bake them. Easy snacks like this are a great way to use zucchinis if you have a plentiful patch of the vegetable in the garden. They’re also a pretty healthy way to fulfill a crunch craving.

The spices pop as much as the deep golds and dark greens. I am convinced the vibrancy adds to the enjoyment of these treats. For me, anything colourful instantly gains a few taste points. There must be something psychological to this.

The great thing about baking these bites is that they retain so much of the colour and don’t need an excess of oil for cooking. I made them by tossing the sliced zucchini in olive oil, but I’ll often use spray oil to spray vegetables before cooking. Sprays seem to give a more uniform covering without over doing it. Still, both work great.

I can’t think of a better song for this recipe than Hot Chip’s “Don’t Deny Your Heart”. The pep of the song matches the pep in the snack. The song is from their brand new album Why Make Sense. They’re always turning out such great tunes. Check them out:

Let’s get cooking!

Zucchini Chips off the Old Block

Good for a small gathering

  • 4 medium (20-centimeters or 8-inches)zucchinis
  • 2 teaspoons dried basil leaves
  • 1 teaspoon garlic salt
  • 1 teaspoon dried rosemary leaves
  • 1 to 2 tablespoons olive oil
  1. Preheat oven to 250˚F (120˚C).
  2. Cut the zucchini into 3.5mm thick slices. Toss with the spices and oil. Make sure pieces are evenly coated.
  3. Lay the zucchini slices evenly on two baking sheets. Some pieces will overlap, but they’ll shrink as they bake. Put sheets on the centre rack of the preheated oven. Bake for 2 to 3 hours until golden brown and crisp. Check every half hour and flip the chips as necessary. Allow to cool for a few minutes then enjoy! They’re best served within a couple of hours.
