Sundried Pesto Pasta Salad

Sundried Pesto Pasta SaladSundried Pesto Pasta Salad emerged quite serendipitously. I had a bunch of spare ingredients lying around and decided to throw them into a blender, then onto pasta. Voila: an instant household favourite.

Before I knew it, I was whipping up another batch to bring to a potluck. What a hit! There’s something really special in the bite of sundried tomatoes stewing in a grassy olive oil that gives this dish its pop.

I also love how ridiculously well a salad like this fits a potluck. Of course, pasta salads are potluck classics, but this one isn’t the standard creamy variety you usually get. In fact, it offers just enough of a kinship to tomato based pasta sauce that you feel at once excited by something new, while still comforted by something familiar.

Seeing as this dish works both warm or cold, I thought I’d share a song by Ex Hex called “Hot And Cold”. The video is too much fun, featuring lots of potluck-style foods wiggling, jiggling, and getting tossed… and a pizza.

This recipe is really quick to make too, so it’s time to get on it.

Sundried Pesto Pasta Salad

Sundried Pesto Pasta Salad

Good for an 8 person potluck.

  • 1 tablespoon salt
  • 1 pound (510 grams) Fusilli pasta
  • 3 to 4 cloves garlic
  • 1 cup sundried tomatoes (about 85 grams)
  • leaves from 5 to 6 branches of fresh basil
  • 1/2 cup extra virgin olive oil
  • 1/3 cup shredded Parmesan cheese
  • 1/2 teaspoon of chili powder
  • ¼ teaspoon black pepper
  1. Bring a few quarts of water to a boil. Add salt then add pasta. Boil for 10-15 minutes until pasta is tender (to your taste). Drain.
  2. Blend the remaining ingredients in a food processor to make the pesto.
  3. In a medium bowl, stir the pesto and pasta until the pasta is evenly coated. Transfer to a sealable bowl and bring to the potluck, or keep it in fridge for a day or two before serving. Can be served warm or cold.
