Dulce Delicious Chocolate Sandwich Cookies | OhMyPotluck.comChocolate is one of my favourite things, which makes Valentine’s Day an exceptionally joyous time of year for me. In the past, I’ve made red-wine truffles and vegan chocolate cupcakes. This year, I decided to go with heart-shaped sandwich cookies.

My BFF loves caramel so I decided to frost these treats with a salted Dulce de leche buttercream. It really is the perfect union of our guilty pleasures (chocolate and caramel). If you don’t like caramel, the chocolate cookies lend themselves to any frosting: plain vanilla, strawberry, chocolate, you name it. Load them up with whatever your heart desires.

Now, I’ll admit, I’m a bit critical of the Valentine’s Day brand. The objects of affection that I appreciate most on Valentine’s Day are hand-made ones like cut-out paper hearts, lovingly crafted mix-tapes, home-made crossword puzzles and, of course, baked goods. It makes Valentine’s Day a very busy time of year for me as I craft cards and get busy in the kitchen, but after all the glue is scrubbed off and the final cookies baked, I know it’s all been worth it.

Dulce Delicious Chocolate Sandwich Cookies

Makes 4 dozen sandwich cookies


  • 1 cup butter, softened
  • 1 1/2 cups white sugar
  • 1 cup dark brown sugar, packed
  • 2 large eggs
  • 2 teaspoons rum extract
  • 2 1/2 cups flour (plus more for rolling)
  • 1 1/2 cups dutch processed cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt


  • 2/3 cup butter, softened
  • 1 1/2 cups icing sugar, sifted
  • 1/4 cup dulce de leche
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon sea salt
  1. In a large bowl, cream the butter and sugars until light and fluffy. Beat in the eggs and rum extract.
  2. Sift the flour, cocoa, baking soda, baking powder and salt together. Stir the dry ingredients into the creamed mixture a half cup at a time until evenly mixed. Divide the dough into thirds and roll into balls. Wrap each in saran and refrigerate for half an hour.
  3. Preheat oven to 375˚F (190˚C). Line a baking sheet with parchment paper.
  4. On a floured surface, roll the chilled dough out to a quarter-inch thin, or less. Cut into heart shapes and place each shape onto the prepared baking sheet about a half-inch apart. Bake for about 8 minutes, turning the sheet around halfway through to ensure even baking. Remove from oven and cool completely on a wire wrack before icing.
  5. For the filling, cream the butter and icing sugar until smooth. Add the Dulce de leche, vanilla and salt. Beat until light and fluffy.
  6. Ice the bottom-side of a chocolate cookie with about a tablespoon of filling and put another cookie on top to make a Dulce de leche sandwich. Repeat with the rest of cookies. Put on a decorative plate and bring to the potluck.
