Easy Does Italian Salad from OhMyPotluck.comI’ve always found leafy green salads are forgotten at potlucks. Perhaps they seem to lack the sophistication of a layered dip or fancy sweet square. Maybe they’re not as portable or lack longevity of other salads, like pasta or potato. But rest assured, a green salad will be just as loved, especially one as delicious as this!

The key to bringing a salad to a potluck is to bring the dressing separately so guests can add it themselves. I make an exception for caesar salads and kale salads. The latter is hearty enough to be mixed up before hand, but for caesar you’d just mix it on location. I like to buy simple glass dressing bottles, preferably ones with spouts, from the dollar store. If that fails, my cupboard is always full of mason jars that I can use. I also bring extra dressing as sometimes it will get used for other dishes, and it doesn’t hurt to bring it home after the dinner and use it on meals later in the week, so no harm done.

For a salad, it seems appropriate to play some music from a food-loving Canadian singer and songwriter, Mac De Marco. He’s a silly lad, but his music has a lot of charm to it. Here are a couple of his songs from the Salad Days album, starting with the title track:

Easy Does Italian Salad

(Dressing by Debby)

Good for about 10-15 side dishes.

  • 1-2 heads of leafy lettuce, washed and torn into bite size pieces
  • 2 ounces (60 grams) feta
  • about 20 cherry tomatoes
  • 1/4 cup sliced black olives


  • 2 teaspoons dried oregano
  • 2 teaspoons salt
  • 1 teaspoon garlic salt
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley
  • 1 teaspoon white sugar
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon dried basil
  • 1/8 teaspoon celery salt
  • 1/8 teaspoon dried thyme
  • ¼ cup white vinegar
  • 2/3 cup canola oil
  • 2 tablespoons water
  1. Toss together the lettuce, feta, tomatoes and black olives in a serving bowl.
  2. For the dressing: In an airtight and sealable container, stir together the oregano, salt, garlic salt, onion powder, parsley, white sugar, pepper, basil, celery salt and thyme. Add the vinegar, oil and water. Seal the container and shake well to combine, making sure any chunks of herbs are broken up. Transfer the dressing to a bottle.
  3. Bring both the salad and dressing to the potluck, set out and enjoy!
