Mamacaronia Salad

Mamacaronia Salad from OhMyPotluck.comWhen you need a quick and classic potluck dish, this is it. Macaroni salad can be made in under 20 minutes, but still feels genuine and homemade. Not to mention, people have been bringing pasta salads to potlucks for who knows how long.

You can also make a lot of macaroni salad on a shoestring budget. Pasta is very affordable, which is probably why it makes such a great dish for a crowd. I’d assume ramen noodle salads are the same thing, but I haven’t ever attempted one of those (in fact, I don’t even know if a raman noodle salad is something I made up or not).

Sometimes it just feels good to stick with the classics, which is why I’m giving you “Space Oddity” by David Bowie. Man, I love this guy.

I named the salad after an ABBA song, so you can disco dance to that while you’re whipping this up. Good luck and have fun!

Mamacaronia Salad

Makes 2 dozen side servings

  • 3 cups dry elbow macaroni (1 pound)
  • 3 celery stalks, diced (about 1 cup)
  • 3 green onions, sliced (about 1/2 cup)
  • 1/2 red pepper, diced (about 1 cup)


  • 2/3 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons cider vinegar
  • 1 teaspoon dry mustard
  • 2 teaspoons sugar
  • 1/2 teaspoon salt, or to taste
  • 1/2 teaspoon white pepper, or to taste
  1. Bring 2 litres of water to a boil. Add salt, followed by the macaroni, and cook to desired consistency. Drain and allow to cool slightly.
  2. In a small bowl, whisk together the mayonnaise, sour cream, vinegar, dry mustard, sugar, salt and pepper.
  3. Combine the pasta, celery, green onions, red pepper and dressing in a large bowl. Stir together to coat all the pasta. Put into a nice serving dish and store in the fridge until ready to bring to the party. It will keep for a couple days, so you can make it in advance if need be.
