All Fluffed Up Fruit Salad

ambrosia saladIs it  dessert? Is it for the main course? These are good questions, and I can’t tell you, only you can answer that. They work for both and they work absolutely perfectly at a potluck where a course is a loose term.

Just look at how colourful this salad is. Isn’t it beautiful all nestled in a fluffy cloud of marshmallows? The modern day ability to get so many exotic fruits is truly remarkable. Mangoes? I doubt that I could have procured a mango half a century ago.


You can certainly choose your own selection of fruits for the salad. I tried to get a nice array of colours working with these tropical selections (and my BFF loves mangoes so I chose those for him).

All Fluffed Up Fruit Salad

Makes 25-30 side servings.

  • 1 can sweetened condensed milk
  • 1 cup plain greek yogurt
  • 2 tablespoons lime juice
  • 3 cups mini marshmallows
  • 2 ripe mangoes, cut in chunks (about 2 cups)4 kiwis, peeled and cut in chunks (about 2 cups)
  • 2 mandarine oranges, peeled and sectioned (about 1 cup)
  • 1 cup shaved coconut
  • 1 cup cherries, seeded and halved (optional)
  1. In a medium bowl, whisk together the condensed milk, yogurt and lime juice until smooth. Set aside.
  2. In a large bowl, gently stir together the rest of the ingredients. Pour the prepared dressing over and stir to coat. Transfer to a sealable serving bowl and bring to the party and serve within a few hours.
