Tofu Over The Cuckoo’s Nest Salad (Vegan, GF)

tofu saladThis recipe has been a long-time potluck standby for me. I’m actually surprised that I haven’t posted it yet. The marinated tofu has a lovely, punchy flavour and all the veggies make for a great party of colour and taste.

It’s kind of like autumn, isn’t it? The colours of the salad are like all the colourful leaves blanketing the ground and crunching underfoot while walking through the crisp air. I always swoon over the change of seasons, as a new and exhilarating time of year unveils itself.

I was marvelling just the other day at autumn’s bookends. At the beginning, every single place on earth experiences a day that is nearly as long as its night. Everywhere. But at the other end, certain places have weeks of darkness and others weeks of light, while the more equatorial regions have the same even division of the two extremes. I mean, if you think about it, it’s kind of neat.

What’s even more remarkable is how we humans have managed to spread out all around this Earth and adapted to these challenging and practically inhospitable places. I guess we can’t all have homes in the tropics. Plus, we’d miss out on neat things, like Christmas trees, reindeers and Saskatoon berries.

But, because of the magics of the Internet, we don’t need to miss out on a single thing, especially cool music. Bad Cop are a cool group of guys just making some really sweet tunes.  They’re cool, and you can pick up on some of that vibe with their video for “Animal”.

Tofu Over The Cuckoo’s Nest

Good for 20 to 25 people, as a potluck side.

  • 2 tablespoons sweet chili sauce
  • 1 teaspoon grated fresh ginger root
  • 4 cloves garlic, crushed
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 (16 ounces or 454 grams) package extra-firm tofu, drained and diced
  • 2 cups snow peas, trimmed (about 8 ounces or 225 grams)
  • 2 teaspoons salt
  • 4 small carrots, shredded
  • 2 cups red cabbage, shredded (about half a small head or 7 ounces or 200 grams)
  • 2 tablespoons black sesame seeds
  1. In a large bowl, mix the chili sauce, ginger, garlic, soy sauce, and sesame oil. Toss tofu in the mixture, and marinate for at least 1 hour in the refrigerator.
  2. Bring a pot of water to a boil. Salt the boiling water and immerse the snow peas in it for 1 to 2 minutes. Drain.
  3. Toss the peas, carrots, cabbage, and sesame seeds with the marinated tofu. Put into sealable serving bowl and bring to potluck. The dish tastes even better after a few hours, when all of the vegetables have had a chance to party in the sauce.

    You had me at sweet chili sauce – this looks great and because it’s cabbage, I bet I could even make it at the beginning of the week and enjoy it for the rest!

      You sure can! I make this a lot and many times I do it just to have a nutritious salad for the week.
