The Red Wine Truffle Shuffle

trufflesI love truffles but I don’t think I ever knew what a truffle really was. I’ve had so many and they are all different. Some are really rich and thick while others are fluffy and light. So I got truffle schooled. I found out that a truffle is just ganache with coating. Ganache is chocolate and cream (aka tasty). I don’t understand how people screw up truffles, it’s so simple. Just look at these ingredients, nothing to it.


I realized that with so few ingredients you have to go for the highest quality stuff. The snobby wine store employee refused to sell me an expensive wine if I was just going to be putting it in truffles so I got something decent. It’s a really really dry wine, which I like and not too many powerful flavours. I probably spent half an hour at the wine market trying to pick something that would be good. I kept looking at wines that had fruity overtones (blackberries, plums, cherries, etcetera) but what I really wanted is one that had chocolate as a pairing suggestion. Anyway, I got a nice Côtes de Bourg. I probably should have gone with a Cabernet Savignon or my tried and true Apothic Red blend but it worked.


This whole thing turned out to be a ton of fun. Making truffles is a very intimate ordeal. Each step requires careful attention and patience. You have to pay close attention to the ganache as it chills. You get really close to it as your shaping it. I had chocolate melting all down my wrists by the time I was done shaping the truffles. Then showing love and care as you enrobe them in chocolate and coating. If I didn’t understand why truffles were the food of love before, I sure do now. I would not bother making these for anyone I hated or even vaguely disliked.


I’m excited to try adding different things instead of red wine. I still have half the bottle of heavy cream that I didn’t use for these ones and a couple tablespoons of sorted lavender buds that I didn’t use for the lavender cookies so perhaps that shall be the next kitchen escapade.

The Red Wine Truffle Shuffle

(Thanks to Ian on Instructables and the recipe from food.com for proportions)

Makes about 2 dozen.


  • 1/2 cup heavy cream
  • 6 tablespoons unsalted butter
  • 8 ounces (225 grams) high quality bittersweet chocolate, coarsely chopped
  • 1/2 cup dry red wine


  • 4 ounces (115 grams) high quality bittersweet chocolate
  • cocoa powder or corse sea salt for finishing
  1. Bring cream to a simmer, add the butter and stir until melted and slightly boiling.
  2. Place the chocolate into a pyrex or glass bowl. Pour the cream over the chocolate. Allow the chocolate to melt for 5 minutes before stirring. (Placing the bowl in some warm water will help melt the chocolate.)IMG1691
  3. Add the red wine and stir until wine is incorporated and the ganache is smooth.IMG1695
  4. Place in the refrigerator for 1 hour. Stir every 15 minutes, then every 5 minutes in the last quarter hour (i.e. 15 minutes, stir, 15 minutes, stir, 15 minutes, stir, 5 minutes, stir, 5 minutes, stir, 5 minutes, done). Do not stir the ganache at the end, it should be quite firm and shapeable.IMG1723
  5. Put a sheet of waxed paper or parchment paper onto a baking sheet (or something flat that will fit in your fridge). Use your hands and a metal spoon to scoop about a 1/2 ounce (15 grams) of ganache and form it into a ball. Place onto prepared pan. Make sure a loved one is nearby to turn the tap on for you as you’ll get chocolate all over you (wink wink). Once all the ganache has been used place the truffles into the fridge for 15 minutes or until the truffles are firm.
  6. In a double boiler (or a metal bowl placed over a pot of boiling water) melt 4 ounces of chocolate. Place the truffles into the melted chocolate and coat them completely. Remove them with a fork and return them to the baking sheet. Sprinkle with cocoa or sea salt before the chocolate sets.
  7. Keep truffles refrigerated for up to one week until ready to serve.

    I love truffles! I make peanut butter cream filled ones dipped in chocolate. I’ve never seen them with red wine. Wow! They look amazing!

      They turned out so good! The red wine isn’t too overpowering but adds some good flavour.
