Sweetly Soft Granola Bars

Not all potlucks have to be around a kitchen. Don’t forget, picnics are potlucks too. Actually, these granola bars make excellent trail snacks for a high altitude potluck picnic of any sort. Pair it with some fresh fruit, juice or smoothie and it will keep everyone satisfied.

Sweetly Soft Granola Bars

Makes 8 really decent sized bars or 16 smaller bites.

  • 1 3/4 cup oats
  • 1/3 cup packed brown sugar
  • 1/3 cup oat flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon

Nuts (1 cup)

  • 1/3 cup slivered almonds
  • 1/3 cup pecans, chopped
  • 1/3 cup walnuts, chopped

Dried Fruit (1 cup)

  • 2 tablespoons raisins
  • 2 tablespoons dried cranberries
  • 1/4 cup dried apples, chopped
  • 1/4 cup dried apricots, chopped
  • 1/4 cup dates, chopped

Seeds (1/2 cup)

  • 3 tablespoons flax seeds
  • 5 tablespoons pumpkin seeds
  • 1/2 cup dark chocolate chips
  • 1/3 cup canola oil
  • 1/3 cup peanut butter
  • 1/3 cup liquid honey
  • 1 large egg
  • 2 teaspoons vanilla extract
  1. Preheat oven to 350ºF. Grease an 8″ x 8″ pan.
  2. In a large bowl, stir the oats, brown sugar, oat flour, salt and cinnamon together. Stir in the nuts, dried fruit, seeds and chocolate.
  3. In a smaller bowl, whisk the oil, peanut butter, honey, egg and vanilla together. Pour the mixture over the dry ingredients and stir until everything is moist. It should be a bit crumbly. Press firmly into the pan.
  4. Bake for 25-30 minutes. The edges will be golden brown and the texture will be a bit firmer. Cool completely on a wire rack before cutting into 8-16 pieces.
